Most barley shochu gets blended down, but Sei Rin starts as iichiko's unblended honkaku shochu and gets a second act: a slow pass through bamboo charcoal filtration that mellows it and lifts a clean, subtly sweet aroma. It's distilled from 100% two-row barley with white koji in Oita Prefecture, on Japan's southernmost island of Kyushu, then bottled lighter at 20% ABV. Pour it over ice and let the barley's soft sweetness stretch out slowly.
