Handcrafted in Comfort, Texas, it starts from an unusual base: prickly pear cactus pads fermented with no corn or grain, giving a cleaner, ultra-smooth backbone. Hand-harvested Ashe juniper (cedar) berries, orange and lemon peel, and cinnamon stick go into the still, then the gin is proofed down with distilled rainwater. The result is an 80-proof gin with real regional character. Pour it over ice with grapefruit soda for an easy Hill Country highball.
