Hibiki Suntory Whisky Blossom Harmony Bottled in 2021

The one that started it all. For the 2021 debut of Blossom Harmony, Suntory's fifth-generation Chief Blender Shinji Fukuyo did something never done with Hibiki before: he finished a rare selection of whisky in casks made from sakura — Japanese cherry blossom wood — then married it with malt and grain whiskies from the Yamazaki, Hakushu and Chita distilleries. The pour is soft and floral, with cherry blossom, peach and honeysuckle drifting into a smooth, gently spiced finish.
Around 30,000 bottles were released in Japan in May 2021, with a small allocation reaching select global markets that fall. As the first chapter of what became an annual spring tradition, the 2021 bottling is the cornerstone of the series — Hibiki's 24-faceted decanter dressed in its first cherry-blossom livery.
