Herzog Special Reserve Cabernet Sauvignon comes from Alexander Valley in Sonoma County, California, made by Herzog Wine Cellars in Oxnard. The destemmed fruit undergoes a two-day cold soak before fermentation, then completes malolactic fermentation, before aging in a mix of new and two-year-old French oak barrels. The result is a dry, full-bodied red layered with blackberry, cherry, and licorice, plus mocha and vanilla from the oak, backed by smooth, well-integrated tannins. Pour it alongside roasted turkey or grilled steak, or set a bottle aside — this one has the structure to age.
