Meet Aidani, one of Santorini's quietly brilliant indigenous grapes, bottled solo by Hatzidakis from organic island vineyards. It's 100% Aidani, fermented with wild yeasts, then rested six months on the fine lees and left unfiltered. Expect gardenia and small white flowers layered with citrus, pear, and stone fruit, finishing with a buttery, saline lift that says volcanic soil. Pour it at 12-14C alongside light cheeses, fresh salads, or a fruit platter. A discovery worth making.
