Certified-organic Cognac is a rarity, and Hardy makes one worth knowing. The grapes, Ugni Blanc, Folle Blanche, and Colombard, come from the sea-influenced Bons Bois cru and carry ECOCERT organic certification. Expect a nose of spring flowers giving way to vanilla, ripe pear, and roasted hazelnut on the palate, with a delicate, floral finish. It picked up Double Gold at the 2019 SIP Awards. Bottled at 40% ABV. Sip it neat, over ice, or lengthened into a highball.
