Tirsat comes from Gurra di Mare, a tiny Sicilian estate whose vines run right down to the beach at Porto Palo, near Menfi. The name means "reef" in Arabic, a nod to the coastline just past the rows. A 50/50 Chardonnay-Viognier blend, it ferments in steel with malolactic conversion, then spends nine months refining in tank before bottling. Expect apricot, yellow peach, and honeyed white flowers, with a fresh finish. Pour it alongside raw or fried fish, or swordfish rolls.
