Friuli's Bepi Tosolini has been distilling grappa since 1943, and Cividina is their house style, built from the pomace of several different Friulian grape varieties rather than a single grape. Small batches pass through manually operated copper pot stills using steam distillation — what the family calls the Tosolini method — producing a full-bodied spirit with fresh fruit and floral aromas, blanched almond, and a finish of cracked black pepper.
