Giffard Gum Syrup (Sirop de Gomme) comes from Maison Giffard, the family-run syrup and liqueur house founded in Angers, France, in 1885. Made simply from sugar, water, arabic gum, and a touch of orange blossom extract, it pours as a nearly clear syrup with a faint ivory tint and a soft floral aroma. On the palate it delivers a smooth, rounded sweetness with a delicate orange blossom note that rounds out sharp spirits without adding overt fruit flavor. Bartenders use it to add body and silkiness to sours and classic cocktails like the Whiskey Sour, in place of simple syrup.
