Here's a California original with Cognac in its blood: Germain-Robin was started in 1982 by a distiller whose family made cognac in France, then reimagined the craft in Mendocino County. This alambic brandy is pot-distilled in Charentais stills from California Colombard grapes and rested seven years in Limousin oak. Expect apple and pear on the nose, honeysuckle and cherry blossom, then apricot, peach, and a cinnamon-brown-sugar warmth. Sip it neat in a snifter, or stir into a brandy Old Fashioned.
