J De Villebois Pouilly-Fumé comes from Domaine J. de Villebois, a Loire Valley estate that specializes in Sauvignon Blanc across Pouilly-Fumé, Sancerre, and Menetou-Salon. Grown on flinty clay and limestone soils, the grapes are pressed gently and fermented in stainless steel, then rested on the lees for at least six months before bottling. The result is a pale, dry white with smoky minerality, ripe stone fruit, and a crisp, saline finish. Pour it alongside oysters, lobster, or goat cheese, or simply on its own as an aperitif.
