Named for the Cesari family matriarch, Mara is Valpolicella's answer to Amarone's richness, without the wait. Made from Corvina-led grapes re-passed over Amarone's spent skins, the ripasso process pulls extra depth, dried-fruit weight, and a touch of spice into what starts as a lighter Valpolicella red. Expect blackberry and cherry fruit against cola and cedar notes, finishing soft and chewy. Pour it alongside grilled meats or a hearty pasta.
