Four Pillars started as a straightforward dry gin — until 2015, when a stray parcel of Yarra Valley Shiraz grapes showed up at the winery next door and someone decided to steep whole berries in the gin instead of pressing them into wine. Eight weeks later it emerged a deep reddish-purple, no sugar added, with pine, citrus, and peppery raspberry on the nose and a long juniper-spice finish. Pour it over ice with soda and a lemon wedge, or build a Bloody Shiraz G&T.
