Fable Whisky's Chapter Three: Moon is a single malt Scotch from Dailuaine distillery in Speyside, matured 11-12 years in a single ex-bourbon hogshead. Fable bottles each release as a chapter in a Scottish folk tale, and this one arrives natural colour, non-chill filtered, at cask strength. Expect green apple and buttered toast on the nose, toasted malt and vanilla through the palate, closing on honeyed red apple and cereal notes. Bold, savoury-sweet, and built for a neat pour or a slow evening dram alongside aged cheddar.
Tasting notes
Nose: Green apple, bold, buttered burnt toast. Grassy and nutty with soft some spicy notes.
Palate: Swathes of vanilla and sweetness bolstered by toasted malt. Fruit strudel is acaentuated by a thick and creamy mouthfeel, with baked apples coming to the fore. With a splash of water, grassiness bursts through to highlight the distillery character.
Finish: Sweet red apples and honey with some naked cereals and vanilla as this whisky draws to a close.
