A Jalisco reposado that splits the difference in the cookhouse: half the blue Weber agave gets a slow roast in traditional brick ovens, the other half a high-pressure autoclave. From there it rests about eight months in American and French oak, some of it former Tennessee whiskey barrels. Expect caramel and vanilla up front, then cooked agave and a cinnamon-black-pepper snap on the finish. Sip it neat, or let it anchor a cinnamon-leaning old fashioned.
