Cuishe is one of mezcal's quiet showoffs — a wild Karwinskii agave that grows a tall trunk, and here the whole plant gets roasted, not just the heart. El Buho's team stone-oven roasts it for about a week, mills it under a horse-drawn tahona, ferments with wild yeast in pine, then distills twice in copper. The result is herbaceous and peppery up front, with sandalwood, sage and palo santo, drying to a mineral, grassy finish. Pour it neat in a copita and sip slow.
