Drimia Sfar is a Cabernet Sauvignon–Petit Verdot blend from Drimia Winery, a small estate in Israel's Yatir Hills on the edge of the Negev desert, with grapes grown at roughly 884 meters elevation. The blend runs 80% Cabernet Sauvignon and 20% Petit Verdot, aged in oak barrels for around 16-18 months before release. Expect a deep, inky-purple dry red with layers of black fruit, ripe plum, and dark chocolate leading to a long finish. Pour it alongside grilled lamb, aged cheese, or a slow-cooked short rib.
