Tobalá agave grows wild in Oaxaca's high desert canyons and takes over a decade to mature, which is why this mezcal from Doña Vega, a fifth-generation, women-run distillery in Santiago Matatlán, stays intentionally small-batch. Piñas are roasted in stone-lined pits before distilling into something rounder and less smoky than you'd expect: vanilla, cocoa, and nougat over a base of toasted oak, finishing long and smooth at 43% ABV. Pour it neat and let it open up slowly.
