Overview

Cultivated espadín from the mountains above the Oaxaca Valley, roasted, fermented with mountain spring water and twice distilled in copper alembic stills. Bottled unaged at 48%, so the smoke sits behind the cooked-agave sweetness rather than on top of it. Sturdy enough for a mezcal negroni, clean enough to sip neat.
