Tobalá is the wild agave every mezcal nerd chases — a plant that takes over a decade to mature, foraged rather than farmed. This lot comes from San Baltazar Guelavia, Oaxaca, where three generations of Zapotec distillers roast it in a stone-lined pit with red oak, mill it by tahona, and double-distill in small copper pots — just 300 bottles. Expect honeysuckle and jasmine up front, sweet cooked agave, honey, white pepper, and a soft smoky finish. Pour it neat, slow, in good company.
