Don Cheyo Reposado starts as 100% blue agave from Los Valles, Jalisco, twice-distilled in stainless steel before resting about eight months in American oak ex-bourbon barrels. That barrel time shows up fast: citrus and ripe stone fruit on the nose lead into a medium-bodied palate of vanilla, pear, and a whisper of cinnamon, finishing toasty with dried fruit and almond. Pour it neat to catch the oak, or build it into a spiced margarita for something warmer.
