Don Abraham's añejo comes from Amatitán, in the valley just outside the town of Tequila, where the Montes family hand-tends over 500,000 organically farmed blue agave plants — no herbicides, just hand-pulled weeds turned into compost. Rested a minimum of fourteen months in oak, it picks up cooked agave, smoke, and cinnamon, with a nose leaning into caramel, vanilla, and toasted oak. It earned gold at the 2008 Agave Spirits Challenge. Sip it neat, maybe with a wedge of orange, and let the earthy finish linger.
