Provence rosé has plenty of imitators, but Domaines Ott helped write the template, founded in 1896 and still bottled in its signature curvy silhouette. Château de Selle grows on arid limestone hills, a Grenache-led blend rounded out with Cinsault, Syrah and Mourvèdre. Expect a pale pink glass with silver tints, citrus and white flower on the nose, gentle peach, and a mineral spine that closes slightly spicy. Chill it well and pour alongside grilled fish or a sunny afternoon.
