Espadín mezcal from Silacayoápam in Oaxaca's Mixteca, where maestro mezcalero Don Manuel González works with agave hearts left to mature nine to twelve years before harvest. The plants are roasted in conical stone ovens, crushed by hand-turned ripping knife, fermented naturally in oak, then double-distilled in copper stills.
