Venezuela's Destilerías Unidas built this one on an odd piece of history: a Batch Kettle still, originally made for whisky in Canada and shipped to the distillery in 1959, now used to coax something new out of fermented sugarcane honey. Six years in ex-bourbon casks turn out a deep golden rum with a whiskey-leaning character — wildflower and vanilla up front, toasted caramel and ripe red fruit underneath, finishing soft and long. Pour it neat, in a rocks glass, for slow sipping after dinner.
