Named for the Daou brothers' father, Soul of a Lion is the estate's flagship: a Bordeaux-style blend built on Cabernet Sauvignon, with Cabernet Franc and Petit Verdot from vines grown 2,200 feet up on DAOU Mountain in Paso Robles' Adelaida District. The calcareous clay soil there pushes deep, structured fruit, and 22 months in new French oak layer in notes of blueberry, cherry pie, and toasted vanilla. Pour it alongside a grilled ribeye or rack of lamb and let it open up.
