Here's Paso Robles making a serious statement. Patrimony comes off the high-elevation limestone soils of the Adelaida District, the passion project of brothers Daniel and Georges Daou. It's Cabernet Sauvignon aged a patient 30 months in all-new French oak, which shows up as red currant, cherry preserve, and plum layered with tobacco leaf, star anise, and a whiff of lavender. The palate turns toward blueberry, baking spice, and salted dark chocolate. Decant it, then pour alongside a hard-seared ribeye.
