Daltôn Estate Shiraz hails from Merom Hagalil in Israel's Upper Galilee, where Dalton Winery has farmed its own vineyards since 1995. Grapes are crushed within minutes of harvest and fermented in stainless steel, with the skins mixed in repeatedly each day to pull maximum color and structure before the wine settles into new American oak for about a year. The result is a deep, near-black Shiraz with black fruit, plum, and a savory streak of black pepper, finishing long with soft, integrated tannins.
