THE WINEThe philosophy behind this wine wasto make a chardonnay with as littleintervention as possible. We havemoved away from the heavy oakystyle wine to bring much lighter andfruitier wine, which we believe is atruer expression of the fruit and awine that is much easier to drink.WINEMAKINGThe grapes were picked at the endof August. Proximity to the wineryallowed for immediate crushing andchilling. Only the free run juice wasused to make this wine. Reductive handling of the must wasencouraged and cold fermentationtook place in stainless steel tankswithout the influence of oak. Foradded complexity, the wine wasmatured on its lees for about amonth after fermentation.TASTING NOTESA fruity wine with well-balancedacidity, bursting with citrus andtropical fruit flavours, especiallypeaches, apricots and a littlemelon, this wine offers a new andexciting facet to Chardonnay inIsrael.
