Hand-crafted in Santiago Matatlán, Oaxaca by mother-son distillers Margarita Blas and Carlos Mendez Blas, this espadín mezcal follows a generations-old process start to finish: agave roasted in a conical earthen pit, crushed by stone tahona, fermented in open wood vats, then twice-distilled through a 350-liter copper still. Bottled at 45% ABV, it unfurls smoke alongside white flowers, stone fruit, and a peppery snap. Pour it neat in a copita to sip slowly, or alongside grilled vegetables and citrus for a smoky, savory pairing.
