Cognac blended like a memory: over 100 rare eaux-de-vie, some resting in the House's Paradis cellar since the early 1900s, folded together with younger stocks from the 1970s and '80s. Drawn from Grande Champagne and Borderies crus, it opens with sandalwood and cigar tobacco, then eases into toffee, marzipan and honey before dried plum, apricot and a whisper of liquorice on the finish. Bottled at 42% in a suspended Baccarat crystal decanter. Pour a small measure neat and let it unwind.
