Cotswolds Dry Gin comes from an English distillery founded by a transplanted New Yorker who looked at the barley fields near his weekend home and figured someone ought to be distilling there. Nine botanicals go into the pot, including lavender grown up the road in Snowshill and lime and grapefruit zests hand-peeled fresh (hundreds a week) rather than dried. The result is juniper-led with citrus brightness and a floral edge, turning cloudy and pearlescent over ice. Best poured long with tonic, grapefruit, and a bay leaf.
