Corralejo's Extra Añejo comes from Guanajuato, one of the rare spots outside Jalisco allowed to make tequila — already a fun twist on what "tequila country" means. It's double-distilled using the Charentais method (borrowed from Cognac), then rests 36 months in American and French oak. The result: deep gold, oak and smoke up front, citrus and caramel underneath. Skip the shaker here — pour it neat and let the layers unfold slowly.
