From Fresno County's Corbin Cash Distillery, this blended whiskey pairs the estate an unlikely way: 80% spirit distilled from their own sweet potatoes, 20% Merced rye, each aged separately in charred American white oak for up to four years before blending. The result is a milder, bourbon-esque pour with sharp notes of sweet potato, toffee, cocoa, and char, finishing mellow and slightly dry.
