Pinot Noir meets bourbon country. Cooper & Thief takes California-grown Pinot Noir — mostly Pinot with a splash of Petite Sirah and Petit Verdot — and rests it three months in emptied bourbon barrels, pulling in vanilla, baking spice, and a whisper of salted caramel alongside the wine's bright Rainier-cherry fruit. The oak-driven finish makes it a natural pour alongside smoked meats or dark chocolate, no whiskey glass required.
