In Turin, this is what you drink walking out of the theatre — a small glass, cold, with a twist of lemon. Giulio Cocchi built Dopo Teatro on wormwood, rhubarb, quassia wood, and a double infusion of cinchona bark, then folded in Barolo Chinato wine for a tawny-red hue and a softer edge. The result pours bittersweet and mulled-wine rich, with cinnamon, pepper, and a long, bone-dry quinine finish. Sip it chilled on its own, or let it deepen a Boulevardier or Martinez.
Tasting notes
Vermouth Amaro Cocchi has been created according to the original recipe by Giulio Cocchi where Artemisia was enriched with rhubarb, quassia wood, chiretta and a double infusion of cinchona.
The addition of Barolo Chinato to the base wine gives delicately red nuances and a further soft and complex note – totally Cocchi style.
