Marlborough built its name on Sauvignon Blanc, but Cloudy Bay's Pinot Noir proves the region's clay soils go further. Grapes are de-stemmed and fermented in open-top vats with wild yeast, with a portion of whole bunches left in for structure, then aged in French oak for eleven months — a hands-on process that yields a silky, fine-tannined red with bright cherry and dark berry character. Pour it slightly chilled alongside roast duck or mushroom risotto.
