Named for an apple whose ripe seeds rattle when shaken, this organic Normandy brandy comes from Benoit Louvet's orchards sitting between the Pays d'Auge and the Domfrontais. Cider is distilled in copper pot stills and rested around six years, giving aromas of poached pear, apple and cinnamon over flavors of peach, brown sugar and caramel. Pour it neat after dinner, or stir it into an autumn cocktail.
