Brooklyn's Chief Gowanus Gin resurrects a Dutch-American recipe historian David Wondrich unearthed from the early 1800s — a "Holland gin" built on rye whiskey, not neutral spirit. New York Distilling Co. runs its own unaged rye through a third pot-still distillation with juniper and Cluster hops, then rests it three months in oak, landing somewhere between gin and jenever. Expect rye spice, toasted bread, and eucalyptus on the nose. Try it in an Old Fashioned in place of your usual base spirit.
