Château Sérilhan comes from a 24-hectare Saint-Estèphe estate on gravelly, chalky Médoc soil, where owner Didier Marcelis hand-picks the fruit plot by plot. The 2015 leans mostly Cabernet Sauvignon with Merlot and a touch of Cabernet Franc, aged in barrel for depth. Expect blackberry and black currant fruit, damp earth, and a cedar edge with a silky, medium-bodied finish. Pour it alongside braised short ribs or an aged hard cheese.
