Chandon's etoile is the California house's prestige cuvee — a blend of 48% Chardonnay, 46% Pinot Noir, and 6% Pinot Meunier drawn from the cool, bay-fringed Los Carneros vineyards. Made in the traditional method and rested a minimum of five years on its lees, it sends up a fine, persistent stream of tiny bubbles carrying brioche, baked apple, honey, toasted almond, and warm brown spice. Pour it as an aperitif, or alongside oysters and brown-butter scallops.
