Every bottle here starts with a happy accident: after a 2007 fire at St. Lucia Distillers, a batch of casks got misplaced during rebuilding, and the rum inside quietly aged past the point of the standard blend. This is the recreation. A marriage of Coffey and pot still rum aged in ex-bourbon barrels, then rested in oak vats, it pours mahogany with raisin, cigar tobacco, honey and vanilla, and a warm palate of grilled tropical fruit and candied walnuts. Sip it neat or over one big cube.
