Aglianico is Southern Italy's answer to bold, structured red wine, and this Beneventano bottling from Casale Del '700 shows why. Grown in Campania's cooler pockets — terrain that suits this thick-skinned native grape — it pours a deep garnet with firm tannins and bright acidity up front, settling into plummy fruit with a streak of chocolate as it opens. Pour it with a fatty roast or umami-driven dishes like mushrooms in soy or black bean sauce.
