Carmel Appellation Cabernet Sauvignon comes from Carmel Wines, Israel's oldest winery, founded in 1882, sourcing fruit from select vineyards in the cooler-climate Upper Galilee. This dry red ages roughly a year in French oak, landing deep purple in the glass with a nose of blackcurrant, black cherry, and blackberry, layered with cedar, tobacco, and a touch of green pepper. Tannins are firm but balanced, giving the wine structure without heaviness. Pour it alongside grilled steak, lamb, or another rich, char-forward main where the oak and dark fruit have something to lean against.
