Callisto starts as charcoal-filtered aged rum from Trinidad and Nicaragua, then takes a very un-rum-like turn: a secondary infusion of California-grown rosemary, lavender, burdock root, and cherry bark, with zero juniper anywhere. The filtering strips out the color and oaky edges so those botanicals can actually shine, landing somewhere between rum and gin — dry, floral, faintly spicy, with a long herbal fade. Petaluma's Giles Templeman built it as a gin stand-in for rum lovers. Pour it over ice, or swap it straight into your favorite gin cocktail.
