In 1866, two traveling merchants in the French Catalan town of Thuir began blending Roussillon red wine with cinchona bark, the source of quinine, and a mistelle base — an early recipe in France's quinquina apéritif tradition that became Byrrh. The 18% ABV Grand Quinquina pours deep ruby red, opening with dark cherry and dried plum before settling into an earthy, spicy bitterness threaded with licorice and bitter chocolate. Serve it over ice with an orange twist, or lengthen it with soda water for something lighter.
