Cenizo isn't a mezcal you bump into often. Bozal makes this joven from wild Agave durangensis grown in the high, dry hills around Nombre de Dios, Durango, some plots reaching 8,500 feet. The agave roasts in earthen pit ovens, ferments open-air on wild yeast, then double-distills in copper. Expect bright orange peel and florals up front, then mesquite, barbecued meat, and dark chocolate under a gentle smoke. Sip it neat, room temperature, with an orange slice nearby.
