An ensamble of three Oaxacan agaves: cultivated Espadín plus wild Mexicano and Barril, from Miahuatlán and Etla. Mezcaleros Marcelino and Onofre Ortiz cook the hearts in earthen pit ovens, mill by horse-drawn tahona, ferment in the open air on wild yeast and double-distill in copper. Bottled at 47%.
