For this Old Tom release, the gin rests about three months in late-harvest Semillon barrels sourced from a Napa winery, soaking up a warm golden hue and a natural round sweetness — no added sugar, flavoring, or coloring, just wood contact doing the work. Expect juniper up front, a soft barrel-kissed palate, and a rounded finish. Pour it into a Martinez, or simply neat, slightly chilled.
