Most brandy gets shelved for sipping; Bertoux was built to shake. A New York bartender-and-sommelier duo blended it specifically for cocktails, starting with California Colombard, a bright, high-acid grape. Pot-distilled brandies aged three to seven years are married solera-style in French and American oak at medium toast, giving candied apricot, orange blossom, honeysuckle, and a whisper of nutmeg. At 40% ABV, it's a natural in a Sidecar or Brandy Old Fashioned, but juicy enough to sip neat too.
